个人简介:
徐奇,男,前沿交叉学科研究院院长助理。2011年毕业于华中农业大学食品科学与工程专业,获得工学学士学位;2018年毕业于华中农业大学食品科学专业,获得工学博士学位;2018年加入BWIN必赢唯一官方网站。在Food Hydrocolloids,food chemistry,Ultrasonics Sonochemistry,International Journal of Biological Macromolecules等国际刊物上发表SCI论文20余篇,申请发明专利2项,参编学术著作1部、高校教材1部。主持山东省自然科学基金青年基金1项,教育部产学合作协同育人项目1项,参与国家自然科学基金面上项目2项,青岛市科技惠民项目1项。
研究方向:
1.天然蛋白质/多糖的结构与生物活性;
2.蛋白质递送体系的构建与功能;
3.食品营养素的控释与增效;
4.功能性预制菜的创制和保鲜。
